Sicilian roots, contemporary technique. Our culinary philosophy enhances every ingredient through fish aging: a controlled maturation process that makes each dish more intense, elegant, and surprising. Freshly caught fish isn’t always the best choice for the plate. Through fish aging, the fish is stored at controlled temperature and humidity for several days, allowing natural enzymes to soften the fibers and develop more complex aromas. The result is meat that is more tender, fragrant, and rich in flavor. At Yacht Dining Ortigia, aging is a deliberate choice: to understand the fish, respect its timing, and offer a unique experience.
